Delicious Venison Stew Recipe For Healthy and Economical Wild Game Cooking

Health considerations are one reason why there is a growing popularity of wild game. Venison contains about half the calories of beef, and has just one-eighth of the fat. Also, because of the low fat content, venison freezes well.

This flavorful venison stew recipe makes an inexpensive meal out of what can be an expensive piece of meat. It works perfectly for tougher cuts of venison, as the slow cooking tenderizes the meat nicely. This venison recipe also turns out great in the crockpot.

Ingredients:

1 pound venison stew meat, cut into 1/2-inch chunks

1/2 teaspoon oregano

1 teaspoon ground black pepper

1 teaspoon salt

1 teaspoon ground cumin

2 tablespoons vegetable oil

1 medium red bell pepper, diced

1 medium onion, diced

2 garlic cloves, minced

1 1/2 cups unsalted beef stock

1/3 cup chili sauce

1/2 cup dried apricots, diced

1 14 1/2-ounce can white or yellow hominy

1 14 1/2-ounce can black beans, drained and rinsed

juice of 1 lime

1 tablespoon minced cilantro

Directions:

Preheat oven to 325 degrees fahrenheit, unless using a crockpot.

Toss the venison cubes with a light coating the oregano, salt, pepper, and cumin. Warm the oil in a frying pan over medium heat on the stove top. Brown quickly, then remove with a slotted spoon and place in a crockpot, dutch oven, or a large and heavy pot.

Saute the onion, garlic, and bell pepper in the remaining oil. When they have softened, spoon the vegetables from the pan and put in the larger pot with the venison. Add the beef stock, chili sauce, and apricots. Stir to combine, and cover the pot.

Cook the venison stew over in the pot over low heat (slow simmer) for at least 6 hours, stirring occasionally, and until the venison is tender.

During the last half hour of cooking, mix the hominy and black beans into the stew. Take the stew off the heat, stir in the lime juice, and add the tablespoon of cilantro.

Serve the venison stew hot, adding more cilantro, if desired.

Recipe:

Ingredients:

2 slices of Nature's Own 100% Whole Wheat Bread
2 slices of 2% fat American cheese
2 seconds of olive oil cooking spray

Instructions:

1. Preheat skillet or pan with medium heat
2. Spray pan with 1 second of cooking spray
3. Place both slices of cheese between bread slices
4. Place cheese sandwich in preheated skillet
5. When bread is golden, spray one second cooking spray in pan and flip sandwich
6. Remove from skillet when the other side is golden

Facts:

-Cost per serving: 80 cents
-Calories per serving: 218 calories
-Protein per serving: 16.0 grams
-Carbohydrate grams: 24 grams

A slow cooker (also called a crock pot) is a time saver and a convenient cooking device. You can prepare a meal in the morning and when you arrive from work it is ready to be served. Healthy and Balanced Barbecue Chicken Mix Kabobs Recipe

This is another swell recipe for your barbecue's list.
As we know, meat make up of a large portion of food we grill during our barbecue.
However, in order for us to enjoy a healthy and balance meal, we need to consume vegetables.
Therefore, this chicken mix kabob is a combination of meat and veggie which give you the necessary nutrient for a healthy meal.

Ingredients

Cooking time: 15 minutes

Serving Size: 4

- 4 strip of chicken fillets 150g

- 2 1/2 piece of hotdogs (optional)

- 1/4 small yellow onion

- 1/4 red capsicum

- 1/4 green capsicum

- 1 teaspoon of dark soy sauce

- 1 1/4 teaspoons of sugar

- 2 teaspoons of dried margoram

- 1 1/2 teaspoon of dried thyme

- 1/2 teaspoon of dried dill leaf

- 2 teaspoons of olive oil

- 8 bamboo sticks or skewers

- 1/2 teaspoon of salt

- 1/8 teaspoon of black pepper

Preparation

1. Cut the red capsicum, green capsicum into 1.5 inch pieces. Cut the yellow onion about 1/2 inches width. Place them into the mixing bowl. Add the 1 teaspoon of olive oil, 1/2 teaspoon of dried thyme and 1/2 teaspoon of dill leaf tips and sprinkle some salt and black pepper into the bowl, and stir to coat well. Put in the refrigerator for at least 1 hour

2. Cut the chicken fillets about 1.5 inches pieces and place the chicken fillet into another mixing bowl (Not together with the vegetables). Add in 1 teaspoon of olive oil, 1 1/4 teaspoons of sugar, 1 teaspoon of dark soy sauce, 1/2 teaspoon of salt,1 teaspoon of dried thyme and 2 teaspoon of marjoram, stir to coat well. Put in the refrigerator for at least 1 hour.

3. Cut the hotdog into 3 equal pieces. Fill bamboo sticks /skewers with pieces that are uniform in size and leave a little space between pieces so everything gets equally and thoroughly cooked. Don't overload bamboo stickers /skewers with food packed tightly together.
You are free to arrange the pieces in any order.
(My Kabob combination: Onion, Chicken fillet, red capsicum, chicken fillet, green capsicum, hotdog)
Put the Kabobs in the refrigerator until you are ready to grill.

Outdoor Grilling Method

1. Let then heat to stable first before setting the kabobs on the grill.

2. Turn the kabobs frequently as they're grilling. You have to grill for about 12 - 15 minutes (depending on the actual temperature) before serving

Oven Grilling Method

1. Set the oven mode to toast and preheat the oven to 180C before setting the Kabob on the grills.

2. Cook for 10 - 15 minutes before serving.

Ingredients-

2 tablespoons extra-virgin olive oil
4 large chicken thighs with skin and bones (about 2 pounds)
Ground cloves
1 1/2 cups diced seeded red bell peppers
1 cup chopped onion
1/3 cup golden raisins
1/3 cup coarsely chopped pitted imported green olives
4 small bay leaves
2 garlic cloves, peeled
1 teaspoon hot chili paste or 1 small Serrano Chile, chopped
1 1/2 cups jasmine rice or long-grain white rice (9 to 10 ounces), rinsed, drained
2 to 2 1/2 cups low-salt chicken broth

Method-

Heat the oil in a large skillet on medium-high flame. Sprinkle chicken generously with salt and pepper, then lightly with ground cloves. Add chicken to skillet and sauté until brown, about 5 minutes per side. Transfer chicken to plate.

Pour off all but 4 tablespoons fat from skillet. Add bell peppers, onion, raisins, olives, bay leaves, garlic, and chili paste to skillet. Saute until vegetables begin to soften, about 2 minutes. Add rice; stir 1 minute. Press chicken into rice. Add 2 cups broth; bring to boil. Cover, reduce heat to medium-low, and simmer until chicken is cooked through and rice is tender, adding more broth if dry, about 20 minutes.

Healthy Crock Pot Recipes With Easy Preparation

The other day I was looking through my grocer's weekly sale flyer and I found myself thinking, "The easier the preparation, the worse it is for you." Think about fast food. No preparation, but completely unhealthy.

I continued my thoughts through meal preparations - frozen TV dinners, frozen pizza, frozen "meal in a bag", boxed dinners, the list goes on and on. We are so concerned with doing things quickly we are hindering our health by jamming our bodies full of preservatives and things with names too long to state and too difficult to pronounce.

I pictured my grocery store, which wasn't difficult since I'm usually there at least twice a week. I love my grocer's produce section, seeing all the fresh fruits and vegetables; I usually spend most of my time there. However, thinking of all the isles that follow, my thoughts were once again confirmed. Packaged food after packaged food - even in the organic isle! I know that cooking with natural ingredients is the best way to go, but how are we to do it if we're bombarded with packaged, boxed, preserved food?

Thinking about my own cooking, I know that I use more "pre-packaged" items than I probably should. For convenience sake, I often used frozen vegetables and canned tomatoes. I feed my kids boxed macaroni and cheese. However, they don't eat frozen dinners, ready-made frozen chicken, and we never eat at fast food restaurants.

These thoughts drove me to research my own recipes; were there a handful of crock pot recipes with extremely easy preparation that are healthy? I did find a bunch, and although the recipes with canned soups tend to be higher in sodium, I believe I found a nice balance between easy preparation and health. When it comes right down to it, we want to be healthy and feed our families healthy meals. However, our busy lives often take over and prevent us from doing so. I hope that I have offered you some options to avoid the frozen dinners and fast food restaurants and create healthy meals with ease.

Healthy Cooking Ideas That Will Delight Your Family

Changing the way we cook our food can have a dramatic effect on our health. If we make wiser choices with our food and the way we cook it, we can significantly reduce our risk of contracting cancer and heart disease.

Here are some top tips for healthy cooking:-

1. Invest in non stick pans - With quality non-stick pans you can get away with not using oil at all or by using a low fat cooking spray. You can also 'fry' some foods in a little water to prevent them sticking. If you have to use oil, use olive oil and pat food with kitchen roll after cooking to remove excess oil.

2. Look through your recipes collection for diet recipes and low fat recipes. Cook them in batches and freeze so that you always have a healthy meal option available.

3. Steam or stir-fry vegetables - Cooking them using these methods will help the vegetables to retain their nutrients, colour and taste. Look for healthy recipes like Chinese stir-fries and invest in a wok and steamer. You can buy Chinese bamboo steamers, which just sit on top of a pan of boiling water, or you can buy electric steamers. You can get a good electric steamer for less than the cost of one meal out and the ease of use is a real time saver.

4. Use olive oil - Replace other oils or fats with olive oil which is a mono-unsaturated oil and actually helps to reduce cholesterol. Make your own salad dressings from olive oil and balsamic vinegar to give your salad a Mediterranean taste and this will be lower in fat than commercial salad dressings. Search online for free recipes using olive oil. Some muffin recipes use olive oil or corn oil instead of solid fats.

5. Use fat free milk in cooking and baking to cut the fat content of your healthy recipes.

6. Replace fat in baking - Look for low fat recipes for cakes and biscuits or replace half the fat in recipes with pureed prunes, yogurt or mashed banana. Search for diet recipes for sweet treats.

7. Use fat-free yogurt or creme fraiche instead of using cream for pouring on dessert recipes or fruit.

8. Add more vegetables to casseroles and soups and use fresh or frozen vegetables rather than canned.

9. Don't add salt to food - Season food with herbs, spices, garlic and lemon juice instead of salt.

10. Trim visible fat off meat and use lean meat in your low fat recipes. Cut down on how much red meat you consume and replace with fish and chicken or turkey.

Remember, cooking and eating healthy food is not hard work and definitely not expensive. If you play your cards right you can change you whole family's diet and they won't suspect a thing.
That isn't to say that they won't notice anything though, because they will - they may well notice that they are losing weight, feeling better and getting fewer minor illnesses.

Cooking With Xylitol - The Healthy All Natural Sweetener

Whether you're a dieter or a diabetic, your days of waving away the dessert tray are over, thanks to Xylitol, a natural sweetener that can be used as a stand-in for sugar in virtually any recipe that satisfies your sweet tooth. 

In 2003, nutritionist Karen Edwards wrote an entire Xylitol cookbook -- "Sweeten Your Life the Xylitol Way" -- and three years later unveiled an expanded version containing more than 100 recipes for cookies, cakes, pies, even ice cream and condensed milk, adapted to suit the tastes of those who crave carbohydrates but have concerns about sugar content.

Xylitol, a sweetener that occurs naturally in plants and in small amounts in human tissue, is sold in granulated form and has the sweetness of sugar, but contains roughly 40 percent fewer calories and produces neither the insulin spike of sugar nor the aftertaste of artificial sweeteners like Splenda and aspartame.

Because Xylitol and sugar react similarly to heat, Xylitol can substitute for sugar in cooking and baking on essentially a one-to-one ratio. But experts recommend starting with a smaller amount of Xylitol and adjusting to taste. In recipes calling for white flour, a good rule of thumb is to use a half-cup of Xylitol where you would normally use one cup of sugar and gradually add more until the batter is sweet enough.

Yeast bread is the exception to the rule, however. The same chemical compound that inhibits the production of harmful microorganisms in the mouth has the same effect on the microorganisms in yeast, making Xylitol unsuitable for use in baking yeast-based breads.
