Campfire Cooking Recipes - Chili

You can't have a collection of campfire cooking recipes without a good smokey pot of chili in the mix. Fire cooking with cast iron cooking just spells the great outdoors. What could be better depending on how hot you want that pot of chili than cooking it in a dutch oven and place on hot coals? And chili can be made so many ways that even a little celery and carrots added with some salt and pepper wouldn't turn up anyone's eyebrows if the mood struck to toss them in.

Traditionally the cast iron dutch oven is placed over the hot coals and about 1-2 Lbs of ground beef is added to brown with some chopped onion and garlic. Add about 2 Tbs of chili powder and stir to mix well. You can add some peppers of your choice depending on how hot you want to make it from mild with a sweet pepper to holy cow with some hot spicy peppers. You'll want to drain off the fat as the ground beef browns. You might want to throw in a couple pieces of bacon to give it that smokey taste and add a little Worcestershire sauce or about 1/2 Tsp of liquid smoke. Just keep letting the meat brown up nice but not burn and keep mixing in those peppers, onions and garlic.

When the meat is nicely browned and the onions, garlic and peppers are tender you can add canned kidney or chili beans to the meat mixture juice and all. If you like your chili with just a tiny taste of sweetness try adding a can of pork and beans. Continue simmering your chili over the campfire and stir to keep it from sticking. The chili will thicken as it continues to simmer over the coals or your wood fire.

Meanwhile you can take out a cast iron skillet and treat with a little oil. What goes better with a pot of campfire chili than a skillet fun of cornbread? You can actually make a box of cornbread that you bought in a store but instead of cooking it in an oven you just mix the ingredients together and pour into the cast iron skillet. Place the lid on the skillet and place it on the grate over the fire. The cornbread will cook in the covered cast iron skillet and you'll have a full flavored bread to go with your campfire chili.

Chili doesn't have to be made with ground beef either as other meats work just as well like buffalo, venison, ground pork and even chicken. Chili can also be made with no meat at all or with meat and no beans. Let's not forget either that chili can also be made with stewed tomatoes, tomatoes and diced peppers, tomato sauce or even vegetable juice if necessary. Garnishing chili with a little shredded cheese never hurts either or a spoonful of sour cream if you have it and some chopped green onions and let's not forget the corn chips for that added crunch instead of crackers.

Best Chili Recipes - 5 Tips For Cooking Great Chili!

Chili is a metaphysical thing in the world of cooking. There are major competitions all over the United States, and believe me they can get really cutthroat. People take their chili seriously! Chili is a creation that is highly personal to the person that has created the dish. Lots of folks can work a lifetime to perfect a chili recipe and that is no joke. Just ask anyone that has ever competed in a chili cook off. If you are a newbie to the world of chili and want to get out of "the canned stuff," then welcome! Even if you are an old hat at making chili, welcome! The tips herein will do no harm and only enhance your chili experience! Lets get some tips!

Tip 1. What if your chili is too thick? What kind of chili is it? White?, Red? Beef? Chicken? If your chili is too thick do not use water to thin it out that is what everyone in the world does. Use broth instead! Water will "kill" the hard worked for flavor of your chili creation. Broth adds the liquid that you need and unlike water it also adds flavor and depth to your chili recipe!

Tip 2. What if your chili is way to thin? You could add some tomato paste to it as one way to thicken it. Try it a little bit by little bit until you achieve the consistency that you are looking for! What if the tomato paste does not make your chili thick the way you want it to? Then the next step is to try to use something like cornstarch or corn flour commonly called masa flour! You can also try the old school use of cornmeal. I like this one myself. Cornmeal gives a good texture. Some people I know in the Southern United States say to just use good old fashioned instant mashed potatoes. Not bad! It works and adds texture as well. Then the is the no calorie way to do it by using arrow root mixed with a bit of water and then added to the chili and stirred. As you can see there are many way to make your chili thicker. The choice is yours and you should experiment.

Tip 3. Most people that I know of that make chili at home just use plain old boring everyday Jalapeno's. This is fine in most cases and they do bring the "heat!" But the fact of the matter is that there is a world of different chilies out there. Anaheim, Poblano, Serrano, Sante Fe Chilies, Ancho Chilies, The very popular these days Chipotle in Adobo sauce or Chipotle powder, Cayenne, Tabascos, Thai Chili, Habanera, and Scotch Bonnets! The list can go on and on from country to country. So why not try to use more than one type of chili pepper in your chili? Change the flavor, do not settle for the mundane! Have fun!

Tip 4. first thing is first! Cook the meat! Any meat that you are using should be cooked first. Brown the meat way before you have to add the liquids to the recipe. Browning the meat aids in locking in the flavor of the meat. You do not want your meat to get soggy with the liquids from the chili recipe. I prefer to sear cook my meat. That is turn the flame up high and putting the meat in the pan of my fave the cast iron skillet and so it sizzles quick and stir it around a bit and then turn the heat down. This is a classic searing technique that locks the flavor into the meat.

Tip 5. The better the meat the better the meal! It is a fact that the better the quality of any meat or main component for a meal the better the meal. Remember that is it quality over quantity! Just because you can get some meats cheap and get lot's of it does not mean that it is quality meat and that you will get a quality meal. If you have to use a cheaper meat that is less tender then expect to cook your chili longer to soften it up and consider using a meat tenderizer on it to aid in the softening of the cheaper cuts and cook the chili longer and you should be OK. In the long run if you can afford to get the better cuts then I always day do it!

Camping Fish Recipes - Cooking Your Catch

Camping and fishing go together like ham and eggs. After you clean and gut your catch, try one of these simple camping fish recipes. I have a fish recipe from each category: 1) Easy, 2) Weird, 3) Artery-clogging and finally, 4) Healthy.

Easy: Tin Foil Rainbow Trout

- fresh trout, any kind

- 1 tablespoon butter

- salt and pepper

- 1 small onion, sliced

- Bacon slices (optional)

Leaving the fish whole, stuff the insides with butter, salt and pepper, and as many onions as will fit. Wrap each fish with 1-2 bacon slices if your heart desires. Place stuffed trout on buttered foil and wrap up tightly to trap the moisture. Place over white hot coals for 7-10 minutes.

Weird: Grilled Catfish in Coffee Butter

(I know you'll be skeptical, but this recipe is from the catfishinstitute.com, it is very good.)

- 1 tablespoon lemon juice

- 1 tablespoon instant coffee powder

- 1/4 cup melted butter or margarine

- 1/4 teaspoon onion powder

- 1/2 teaspoon salt

- 2 pounds catfish fillets

Combine lemon juice, instant coffee, butter, onion powder and salt. Brush mixture thickly onto fillets. Grill on a SPAM-sprayed campfire grate for 10 minutes.

Turn and brush fish again with sauce. Grill 10 minutes longer or until fish flakes easily.

Heart-Clogging: Beer Battered Fish

- 1 1/4 c packaged biscuit mix

- 3/4 c beer

- 1 egg

- 1/4 tsp salt

- 4 fresh fish filet

- cooking oil

Beat together biscuit mix, beer, egg and salt. Pat fish to dry. Dip in batter to coat both sides. Fry in hot oil in skillet for 4 to 5 minutes on each side or until done.

Healthy: Steamed Fish with Veggies

- fish fillets

- small potatoes

- 1 medium Vidalia or any Sweet onion, sliced thin

- 2 stalks of celery, chopped

- 1 medium tomato, chopped

- salt and pepper

- 1 tsp Mrs. Dash garlic and herb seasoning

- salad dressing (optional)

Place fish chunks on top of heavy-duty tin foil. Pile vegetables on fish and season with the salt and pepper. Place a salad dressing on fish and vegetables. Italian is best, but Ranch, Raspberry, or some other favorite will work also. Wrap tightly and cook over a campfire for 15 to 20 minutes.

The Sauce For Every Meat Out There!

2 cups ketchup
3/4 cups brown sugar
6 tbsp Molasses
1 tbsp Worcestershire sauce
1/2 teaspoon barbecue sauce
1/4 teaspoon Tabasco sauce
1/4 teaspoon garlic salt

Mix ingredients in small pot over medium heat until boiling. Let cool and serve with all your favorite meats.

Now I'd like to share with you another sauce recipe that is guaranteed to get positive feedback and big attention.

I once attended an Argentine barbecue. It was phenomenal! This family understood that barbecue does not have to be limited to just one single hour in a day. To them a barbecue brings friends and family together for the entire day and even well into the evening! They have parties centered around the barbecue with music and decoration. Its a blast! The meat they cooked was incredible and they kept using an amazing sauce on every meat. I finally demanded to know what that sauce was and now I'll share the special sauce ingredients with you!

The Chimichurri Sauce

1/2 cup olive oil
2 tablespoons fresh lemon juice
1/3 cup minced fresh parsley
1 clove garlic
2 minced shallots
1 teaspoon minced basil, thyme or oregano, or mixture
Salt and pepper to taste

Combine the ingredients and set for at least 2 hours before serving.
This sauce has an amazingly unique flavor. It is most definitely addicting! It can be spooned on companies plates for use as individuals desire. It goes great on lamb, pork, steak and even chicken. You can put it in a clear tall container if you like to displays the colors. I like to show it off a bit.

Remember! "The type of grill you bought is not near as important as the time you spend enjoying it!"

Campfire Cooking Recipes - Fish

Cooking over a fire is rewarding, fun, and probably isn't as hard as you think. If you are looking for something different than the traditional grilled chicken or steak items you might want to consider fish. Whether you buy it ahead of time or catch your own fresh for dinner while on your trip there are several ways to prepare it. Here are some good campfire cooking recipes to get you started. Remember, as with many campfire cooking recipes, cooking times may need to be adjusted depending on how hot the coals are.

FOIL FISH
Pairs perfectly with foil grilled corn on the cob.

4 fish fillets (white fish works well)
2 tablespoons butter
2 celery stalks, quartered
2 carrots, quartered
1 whole lemon, cut in half
Salt and Pepper

On two separate pieces of aluminum foil, place two each of the fish fillets in the center. Put half a tablespoon of butter on each fillet. Squeeze half of the lemon over one pair and the other half over another. Salt and pepper to taste and add half of the celery and carrots to each, then loosely wrap the foil around the fish. Place on hot coals or, depending on how hot the coals are, use a grill grate. Cook for 15-20 minutes, until the fish is flaky.

GRILLED CEDAR SALMON
Adding the cedar plank not only gives it some extra smokey flavor.

1 cedar plank long enough to fit your salmon fillet
1 large salmon fillet, scaled but with skin on
¾ cup olive oil
1 tablespoon rosemary
1 tablespoon thyme
Juice from ½ lemon
Salt and Pepper

Bring up a fire to medium heat and while the fire gets cooking, soak the cedar plank in water for 30 minutes. Brush the salmon with the olive oil and then gently rub in the rosemary and thyme. Sprinkle with salt and pepper to taste. Place the plank on a grill grate that is almost touching the coals. Turn the plank over after 2 minutes to get both sides smoking. Place the salmon fillet skin-side down on the plank and cover loosely with a foil tent to allow the fish to steam cook for 20 minutes. Remove the salmon from the plank or serve it from the cedar. Squeeze the lemon over it just prior to serving.

SNAPPER SOUP
Break out the Dutch oven! Cast iron cooking is a staple of campfire cooking recipes.

1 pound of red snapper, cut into 1 inch pieces
2 cups of chicken broth
¾ cup coarsely chopped carrots
½ cup coarsely chopped celery
2 cloves of garlic, minced
1 medium yellow onion, coarsely chopped
1 tablespoon paprika
¼ teaspoon of pepper
½ teaspoon of salt
1 cup of frozen peas

Place the Dutch oven over the hot coals. Bring the chicken broth, celery and carrots, garlic and onions, paprika, salt and pepper, and peas to a boil for 5 minutes. Add the snapper and simmer for another 10 minutes.

Chinese Food Recipes - Steamed Fish Cooking Guide

Steaming is one of the favorite ways of cooking fish in china, especially when it is very fresh; and the usual way is to steam it buried under a variety of vegetables, while the inside cavity of the fish is stuffed with dried, smoked, pickled or salted ingredients; these latter ingredients seem to impart an additional dimension to the flavor. Here is one of the common cooked recipe :

Steamed Whole Fish (trout, salmon, bream, haddock, carp, mullet, pike, large herrings)

Ingredients:

6 medium Chinese dried mushrooms
2-3 rashers bacon
3-4 slices root ginger
1.5-2 kg fish (or mixture of fishes)
2-3 teaspoons salt
2 tablespoons vegetable oil
3-4 stalks leek
3-4 large onions
4 tablespoons soya sauce
pepper to taste
2 tablespoons vinegar
4 tablespoons chicken stock
2 tablespoons sherry
2 teaspoons sugar
3 tablespoons butter

Preparation

Soak mushrooms in water for 30 minutes. Cut mushrooms and bacon into shreds. Mince ginger. Clean the fish thoroughly, rub both inside and out with salt, ginger and oil and leave to marinate for 1 hour. Stuff the fish with the chopped bacon and mushrooms. Clean the leeks thoroughly then slice both leeks and onions thinly. Mix soya sauce, pepper, vinegar, stock, sherry and sugar until well blended.

Cooking

Heat butter in a saucepan. When melted add onions and leeks and turn them in the butter over medium heat for 1 minute. Pour in the mixed sauce, and stir with the vegetables for 2 minutes over medium heat.
Place a quarter of the vegetable and sauce mixture in the bottom of the large oval-shaped heatproof dish spreading it out evenly. Lay the fish on top of this 'carpet' of onion and leek. Pour the sauce form the saucepan over the length of the fish, and smother the latter with the remaining onion and leek. Place the dish in a steamer, and steam vigorously for 20-35 minutes (depending upon the size, thickness and quantity of the dish).

Serving

Serve in the same dish. (The dish should be excellent for consuming with rice or other bulk foods, supplemented by one or two other savory dishes.)

The low setting of most crockpots is around 200 degrees Fahrenheit. The high setting is about 300 degrees Fahrenheit. An hour of cooking on the high setting is about the same as 2 to 2.5 hours of cooling on the low setting. You will find that most recipes for crockpots recommend cooking the food for around 8 to 10 hours on low.

Advice for Converting Recipes to Use in a Crockpot

When you convert a recipe to the crockpot, there are a few tips you will want to keep in mind. You will want to reduce the amount of liquid the recipe calls for. In the crockpot, liquid does not evaporate. You normally wind up with quite a bit of liquid at the end of cooking time. Reduce the amount of liquid you add to the dish by half, unless you are also using rice or pasta.

The spices you use may need to be adjusted. Ground spices may lose some flavor over many hours of cooking, so do not add them until the last hour of cooking. Whole spices will have their flavors intensified by long cooking times, so you may want to reduce them by half.

If you plan to make chicken soup or other liquid-based meals, only add enough liquid to cover the other ingredients. You can add more liquid towards the end of cooking time if needed. If you are making a cream soup, do not add the dairy products until close to the end to prevent curdling and separating.

You can make dried beans in the crockpot. Cook them overnight on low instead of spending the time soaking them. Add your beans and then cover them with water. Add a teaspoon of baking soda. In the morning, drain the beans before combining them with your other ingredients. Bean soup, chili, and other tasty meals can then proceed in the crockpot as usual.

Not All Foods Love Crockpots

Be aware that some foods do not fare well when cooking for 8 to 10 hours. Rice, pasta, seafood, some vegetables, and dairy products are all too delicate for such long cooking times. When making a dish that contains these ingredients, do not add them until the last couple of hours before serving when your pot is set on low. If you are cooking on high, hold off until the last hour before adding these delicate ingredients. If you really must have milk added to a recipe early on, try evaporated milk.

Browning your meat can be done before adding it to the crockpot to add that lovely coloring. Browning may also reduce the fat content a little bit on some kinds of meat. Browning is optional, however. Roasts can turn out very flavorful in the crockpot with or without it

Easy Fish Recipes - Cooking Fish in the Microwave

Prior to beginning our discussion, it should be noted that microwaves come in many different power ranges. It is difficult to cover them all. We will try to provide a variety of cooking times for different power levels, but at the least will identify the power level used. You may need to adjust per the power setting on your microwave.

Defrosting Fish in the Microwave

For most microwaves, the defrost setting is fairly consistent. Therefore the times listed here will be close for whatever microwave you have. Place the fish in a microwave safe container. In general, fish need 4-6 minutes per pound on the defrost cycle to get thawed. Half way through the defrost cycle, turn over and rearrange fish. Fish should be cold, perhaps even a bit icy at the end. If necessary, allow the fish to thaw for up to 20 minutes at room temperature. Do not leave at room temperature longer.

Cooking Fish in a Microwave

Just like when you cook fish in hot oil, in an oven, or on the grill, fish should be cooked at a high temperature for a relatively short period. The fish will continue to cook internally for some length of time after the microwave is finished. The cooking times listed are for a 700 watt microwave. It is assumed the fish has been previously thawed.


  • Whole Fish = 6-8 minutes per pound

  • Individual Fillets = 4-5 minutes per pound

  • Steaks = 4-5 minutes per pound

The fish will be done when the meat is flaky. You can cook the fish longer if necessary, but do not overcook.

Salmon Steak Recipe


  • Four 1.5 lbs salmon steaks cut approximately 1.5 inches thick

  • Butter (1/3 to 1/4 cup)...No Fat Substitute Works

  • Chopped Parsley

  • Chopped Onion

  • Diced Mushrooms

  • Lemon Juice (2 Tablespoons)

  • Salt and Pepper

In a saucepan melt butter and add parsley, onions, lemon juice, and mushrooms. Put half in the bottom of a bake dish. Lay in the salmon steaks. Season with salt and pepper. Add the remaining mixture. Cover the salmon steaks and place in the microwave. Cook for between 6 and 10 minutes. Let stand for 3-5 minutes covered. Check to see if the fish is flaky after it has stood for 5 minutes. If not, add time in one minute increments on the microwave.

This recipe can be used with trout fillets, halibut, and many other fish. Do not be afraid to experiment.

Japanese Hibachi Cooking - Free Recipes Inside

Are you a fan of yakitori? Japanese food is one of the healthiest foods worldwide, and so it is not surprising to know that the Japanese often grill their food. This grilling is called hibachi, and Japanese hibachi cooking is not only famous in Japan, but in other parts of the world as well. These meats on sticks are a favourite of many, as these taste good, and come fresh and hot; grilled over direct fire.

The best way to do Japanese hibachi cooking is to grill over fire-and not a hot plate. The fire gives your meat a smoky, authentic flavour, which lacks in those which are prepared using metal plates. One example of Japanese hibachi cooking is the sukiyaki. A favourite among many, sukiyaki involves grilling thin slices of beef and then adding vegetables and noodles or rice.

But whether it is beef or chicken you want to grill, the principle holds the same: use authentic over the fire grillers. Also, many agree that one of the secrets of great Japanese hibachi cooking is the sauce.

A great recipe for shrimp sauce is this: you will need two cups of soy sauce, a cup of whipped cream, one-third cup of ground, roasted sesame seeds, a pinch of garlic powder and a teaspoon of dry mustard (dissolve it in a teaspoon of water). Place all ingredients except the cream in a blender for fifteen seconds. In a saucepan, put the mixture and the whipped cream, stirring it over low heat.

Another example of great sauce is simply a mixture of the following: a cup of mayonnaise, a couple of teaspoons of sugar, one and a half teaspoons of chilli sauce, a half teaspoon of paprika, half teaspoon of garlic powder, half teaspoon of lemon pepper, a quarter teaspoon of black ground pepper, one and a half tablespoons of catsup, and a pinch of salt. Use these sauces and your grilled meats will have that extra zest and tanginess.

Cooking for a Crowd? Need Large Quantity Recipes? Why Not Create Your Own?

It is often hard to find just the right large quantity recipe for the theme of your party or for the "culinary experience" you are aspiring to offer your guests. Here are a few tips and suggestions on how to modify your favorite 4-6 serving recipes when you find yourself cooking for a crowd of 20 or more.

What constitutes a crowd? Of course it's all relative (your relatives, not mine). Seriously, if you are accustomed to cooking for one to three, cooking for 20-50 people may seem overwhelming. When cooking for a crowd, there are three important considerations; adequate cookware, sufficient refrigerator space and recipe selection.

Obviously you should seek out recipes geared towards feeding a crowd. It is often easy to find large quantity recipes for basic dishes such as lasagna and mashed potatoes. But what do you do if you have your heart set on using your favorite 4-serving recipe for Corn and Black Bean Polenta for a party of 25?

Even for expert cooks, modifying a recipe for large quantity cooking is not just a matter of endless multiplications. If you expand a recipe too much--you are bound to run into trouble and end up with an off tasting or a poorly flavored dish.

For a basic dish like mashed potatoes, it would be acceptable to multiply all of the ingredients in a 4-serving recipe by two, thus doubling the recipe to serve 8. However, recipes are not indefinitely expandable (or shrinkable for that matter) and enlarging a recipe any more then 2-4 times is not
recommended.

You may also use recipe converters which are easily found online. The converters however, simply "do the math", multiplying each ingredient amount by the increased number of servings you enter into the converter. It does not take into account, for example, the pungency or texture of the ingredients. If a 4-serving recipe calls for 1 tablespoon of finely chopped rosemary and you want to triple the recipe to serve 12; 3 tablespoons of rosemary will probably overwhelm all the other flavors and seasonings in the dish.

It is a good idea to be cautious when multiplying ingredients like salt, flour, cornstarch, eggs, seafood, meats, robust herbs, oils, onions, garlic, celery and peppers. Some ingredients will impart enough flavor, texture or body when only increased a fraction. In addition some of these ingredients can be added a little at a time as you continually check for taste.

What if you want to serve 25 people with a not-so-simple, 4-serving recipe with numerous ingredients? Doubling or tripling more complex recipes could get complicated. One trick is to batch cook. Batch cooking requires planning ahead and cooking in advance. It may also mean freezing prepared dishes. It is also a matter of "doing the math".

To serve 25 with a 4-serving recipe, you can cook 5-6 individual batches of that recipe or, you can expand the recipe (no more then 2-4 times) and cook in batches accordingly. For example, to serve 25 from a 4-serving recipe, double the recipe to 8 and cook three batches or, triple it and cook two batches. To serve 18 with a 6-serving recipe, cook it three times or cook one 6-serving batch and one batch that has been doubled to serve 12. You get the idea.

It is almost impossible to double or triple recipe ingredients for cakes, cookies, pie dough, or breads, without meeting with utter disaster. It's a chemistry thing. Instead, prepare a single batch repeatedly until you have enough food to feed your guests. Again, cooking in advance is the key.

Chances are you can successfully double or triple the ingredients of recipes for individual appetizers, such as stuffed mushrooms or crostini; and for snack mixes, dips, salsas, punches, one serving-size pieces of meat, poultry or fish, tossed salads, pasta salads and vegetables dishes.

If you are cooking for a crowd of 25 or more you will most likely serve buffet style. It is the best way to serve larger crowds. On a buffet of numerous dishes, people will take smaller portions of each in order to sample everything. Also, not everyone will sample every dish. This means that every dish
you prepare need not serve 25. You need only prepare a few large quantity dishes. Look for recipes that serve 8-12 and double them (or not).

With a calculator and a little ingredient know-how you can comfortably convert most of your party food recipes and present a tantalizing menu to your
guests.

Cooking recipes are also available in magazines, newspapers, on food packages, in supermarkets meat section, television shows, cooking classes or you can get them from your friends. Internet is also a great resource for all kinds of recipes from all around the world. File all the cooking recipes in one place, and once you have enough collection, you can also categorize them.

Trying Your Own Cooking Recipes

Once you start feeling comfortable with cooking, you can get creative by experimenting with some ingredients such as substituting beans for carrots or beans for meats, and so on. You can also make use of various spices and herbs, as each of them gives different flavours and aromas. Try experimenting with different textures and colours in the meals. You can take one type of dish and learn lots of variations. Try some international recipes as well such as Chinese, Indian, Italian, Spanish, Continental and southern cooking recipes.

Once you start experimenting, you are bound to fail at times. It is hence a good idea to cook small portions when trying out a new cooking recipe. If you are trying to shed some extra pounds, try some healthy low fat cooking recipes. If you are fond of snacking in between, try some healthy snacks recipes that are made of whole-wheat flour with less fat. When going for grocery shopping, read the labels on the packets so that you know what you are buying.

Tips in Cooking Italian Recipes

If cooking burgers and barbecues, sunny-side ups and omelet, try cooking Italian food and you will find a fast portal to cooking with stress. Cooking Italian food is hard even with a recipe to guide you on your way.

Recipes of Italian food may contain a lot of words that you will not be able to find in ordinary dictionary. This is perhaps because Italian food is often being cooked by those who already have the experience in cooking.

But still, who's stopping you from trying out the different recipes that you will find in an Italian cook book? Who knows, you might even master one dish and another through practice.

Some even have illustrations and pictures of the procedure per dish so that readers will have an idea what it is being done.

TV Research

There are a lot of cooking shows on the market that will help you a lot with improving your skills in cooking Italian food. And with TV, you will have a first hand demonstration of what is being done with various ingredients. Even if you are not actually there with the chef, you can still see what he or she is actually doing.

Know the terms

Constant research and watching TV will expose you to a lot of terms of Italian cooking. This will help you a lot in terms of cooking the other dishes that are in the recipe book. Remember, the procedures are actually all basic and are being done in many of the dishes so all you need to do is master each one and you are already good to go.

Be precise In cooking, whether Italian food or other cuisines, you need to make sure that your measurements are correct and precise. The taste of your dish will depend upon the rightness of the ingredients that you put into it. A small difference in the ingredients can alter the taste. Too much salt will make it too salty. Too much flour in the sauce will make it gooey. Too much water will make it bland and thin. And it goes on and on. The flavorings that you put and the amount of the ingredients will factor a lot in the food that you are preparing so be cautious and use those measuring tools.

Camping Dinners - 7 Foil Cooking Recipes

Somehow food tastes much better outdoors. Maybe it's the crisp and fresh air. Maybe my appetite is bigger. Maybe it's being able to eat without being interrupted by the phone!

The only drawback to camping cooking is preparing and cleaning up. I don't like cooking multi-step recipes or scrubbing smoke-stained dishes in less than adequate dishpans after the meal when I can be watching the sunset.

That is why my favorite cooking 'pot' is aluminum foil.

Foil cooking allows you to prepare delicous meals in the coals of your campfire and have nothing to wash when dinner is over! Below are 7 of my favorite foil wrap recipes. But first let's go over the basics of tin foil cooking:


  • Use heavy-duty foil so you don't burn the food and so the packet doesn't tear.

  • Use assembly-line technique, not one foil packet at a time. E

  • Put some butter in the packet so your food won't stick to the packet.

  • Sprinkle seasonings generously. It makes others think you are a pro at this.

  • Double-seal by folding twice to keep the moisture in.

  • When you fold leave air room for heat circulation inside.

  • Don't cook foil packets over roaring fire. A small fire or white hot coals is better.


Tip: For first night, prepare the foil packets at home. When you get to camp, just toss them on the coals.

Here are 7 foil packet recipes: Note: depending on how hot the coals are, it takes generally 20-30 minutes, less for fish or pre-cooked items. Turn every 5 minutes.

Recipe 1. Ham & Sweet Potato

- 1 slice of pre-cooked ham (this can be fresh or canned)

- 1 serving canned yams (about 3 pieces)

- 1 or 2 canned pineapple rings

- 1 to 2 tablespoons of brown sugar

- 1/2 tablespoon butter

Recipe 2. Chicken Potato Packets

- 4 boneless, skinless chicken breast halves

- 4 medium red potatoes, cut in 1/2-inch cubes

- 2 cups frozen green peas

- 1 jar (12 oz.) chicken gravy

- 1 teaspoon salt

- ½ teaspoon dried thyme

- 1/8 teaspoon pepper

Recipe 3. Baby back pork ribs

- 3 pounds baby back pork ribs

- 1 tablespoon packed brown sugar

- 1 tablespoon paprika

- 2 teaspoons garlic powder

- 1 ½ teaspoons pepper

- ½ cup water

- 1 ½ cups barbecue sauce

Or just purchase a packet of ready-to-heat Lloyds Barbecue Ribs

Recipe 4. Tuscan Sword Fish

- 1 can (15 oz.) Great Northern or cannellini beans, rinsed, drained

- 1 medium tomato, chopped

- 2 tablespoons prepared pesto, divided

- 2 swordfish steaks (4 to 6 oz. each)

- 2 teaspoons lemon juice

- 1 teaspoon lemon pepper

- 2 lemon slices

Recipe 5. Shrimp Jambalaya Packets

- 1 pound peeled and de-veined medium uncooked shrimp

- 4 cups cooked rice

- ½ pound smoked sausage, sliced

- 1 can (14 1/2 oz.) diced tomatoes with garlic and onions

- 1 medium green bell pepper, chopped

- 3 to 4 teaspoons dried Cajun seasoning

- 1 teaspoon hot sauce

Recipe 6 Mexican Pork Packets

- 4 boneless pork chops, about 1/2-inch thick

- 1 teaspoon chili powder

- 1 cup medium chunky salsa

- 1 can (15 1/4 oz.) whole kernel corn, drained OR 1 package (10 oz.) frozen whole kernel corn

- ½ cup chopped green bell pepper

Recipe 7 Cranberry Apple Sweet Potatoes

- 4 medium sweet potatoes, peeled and cut into 1/4-inch slices

- 2 Granny Smith or Golden Delicious apples, cored, thinly sliced in rings

- ½ cup dried cranberries

- 3 tablespoons margarine or butter, melted

- ½ teaspoon ground cinnamon

Filipino Recipes - Beef Caldereta Recipe - Pinoy Food

Caldereta is a very filling and rich meat stew which is famous in the Philippines. Traditional cooking uses goat meat in a thick tomato base. But there are different versions in cooking caldereta like this beef caldereta recipe. Every Filipino family has their own special twist to the recipe and the secrets are mostly passed from generation to generation. Try experimenting by using different vegetables for the ingredients. This delicious beef recipe is usually prepared during fiestas, birthdays and other special occasions.

Ingredients:


  • Carrots - 1 piece, medium, cut into cubes and fried

  • Potatoes - 2 pieces, medium, cut into cubes and fried

  • Pepper and salt - to taste

  • Cheddar cheese - ¼ cup, grated

  • Liver spread - 1 can (85g)

  • Tomato sauce - 1 pack (250ml)

  • Pickle relish - 1 tbsp

  • Onion - ¼ cup, chopped

  • Garlic - 2 tbsp, minced

  • Cooking oil - 2 tbsp

  • Maggi Magic Sarap - 2 packs (8g)

  • Onion - 2 small pieces, sliced

  • Beef ribs - 1 kg

  • Pineapple juice - 2 cups, unsweetened

Cooking Procedure:


  • Combine onions, pineapple juice, Maggi Magic Sarap and beef in a medium-sized pan. Bring to a brisk boil. Lower the heat. Simmer the beef for approximately 2 hours until it becomes tender. Set aside.

  • Heat oil in a separate pan. Sauté onions and garlic for about 1 minute. Add the beef and its broth. Bring to a slow boil.

  • Add cheddar cheese, liver spread, tomato sauce and pickle relish. Allow the mixture to simmer until the sauce thickens slightly. Season with pepper and salt.

  • Add the carrots and potatoes. Cook for an additional 5 minutes.

Striped Bass Recipes

How delicious is striped bass? It's pretty freakin' delicious, especially when cooked properly. Here are some of my favorite recipes for cooking striped bass. Enjoy!

Roasted Striped Bass

1/2 cup fresh bread crumbs

1/2 cup minced fresh parsley

2 tablespoons minced fresh chives

1 tbsp. minced fresh thyme

2 tbsp. minced fresh basil

salt and pepper

4 center-cut pieces of striped bass (each 1/2 pound and about 1 1/2 inches thick)

2 tbsp. Olive oil

Preheat oven to 350 degrees. In a small bowl, stir together the bread crumbs, herbs, and salt and pepper to taste. Place the fish pieces on waxed paper. With your hands, generously rub the oil on both sides of the fish. Sprinkle the bread crumb-herb mixture evenly on the fish, then pat it so that it adheres. Place the fish on a cake rack in a roasting pan. Roast until the fish just flakes, 10 to 15 minutes. To crisp the top, turn the oven to broil and place the fish under the broiler for about 2 minutes. Transfer to a serving platter and serve immediately. Note: This may be prepared 4 hours in advance through step 3 (except for preheating the oven) and refrigerated.

Spanish Style Striped Bass

2 lbs. Striped Bass fillets, trimmed and cut into serving size portions 2 tomatoes, medium size, thinly sliced 1/2 cup green pepper, chopped 1 cucumber, small, thinly sliced 1/2 cup onion, chopped 1 clove garlic minced 2 tbsp. Butter or margarine 2 tbsp. Parsley 1 tbsp. White wine 2 tbsp. Lemon juice 1/2 tsp. Marjoram

Prepare striped bass fillets by cutting fillets in half removing the dark flesh along the dark lateral line that runs through the center of the fillet. Also remove any dark flesh on the side of the fillet that had the skin and along the belly area. Cut trimmed fillets into serving size portions and place in a greased baking dish. Arrange tomato and cucumber slices on top of the fish. In a saucepan, cook onion, green pepper and minced garlic in butter until onion is tender but not brown. Remove from heat and stir in parsley, wine, lemon juice and marjoram. Spoon sauce over the fish. Bake in an oven preheated to 375¡F for 20 to 25 minutes or until fish begins to flake easily with a fork.

South Carolina Striped Bass

Ingredients:

2 Striped Bass Fillets

1 cup white corn meal

1 cup all purpose flour

2 cups buttermilk

Lemon Pepper seasoning, to taste

Directions:

1. Preheat oil in fryer or Dutch oven over medium-high heat.

2. Cut bass into nuggets, place in a bowl with buttermilk and allow to soak

(refrigerated) for at least four hours.

3. Drain buttermilk, but do not rinse fish.

4. Combine corn meal and flour in a zipper top plastic bag.

5. Add fish pieces to the flour mixture a few at a time, shaking bag regularly to coat. 6. Remove fish nuggets and carefully place into hot oil. 7. Fry for 3-5 minutes or until golden brown. 8. Remove from oil, drain, and sprinkle with lemon pepper seasoning.
