Canning Salsa - A How to Guide - Recipe

Canning salsa is a great way to use up all those extra tomatoes and peppers that you grow in your garden every year, so where to you start? It is easier than you think! Read and enjoy.

Ok, so you want to make your own salsa it's allot easier than you think but here are some good tips that you will want to keep in mind. Start by experimenting a little bit; make some fresh salsa using your own ideas. You will need allot of tomatoes, a great tomato to use is just about any Roma style. You may wonder why. Its simple Roma style tomatoes are very meaty, and they are not full of seeds like allot of other types of tomatoes, and they are very easily grown right in your back yard garden.

Ok so enough about tomato education you will also need peppers, onions, and some different seasonings. Before you can your homemade salsa make sure you make several different recipes and also take good notes on what you like or dislike about the flavor as there are allot of ways to enhance the flavor just the way you want it to taste. Some other ingredients that you will want is fresh garlic, sweet bell peppers, vinegar, and some type of heat. Most people prefer jalapeño peppers, they are also easily grown in your back yard garden. Just a word of caution on any type of pepper or chilies, the more you leave on the inside, the more heat you will have, so if you want to tone down the heat on lets say a jape leno pepper make sure you take out the seeds and also the rib inside the pepper that is usually a bit white in color, and also make sure you wash your hands, the oil or juice that is in any hot pepper will remain on your skin so you really don't want to touch yourself anywhere unless you have gotten all this hot stuff off your hands and fingers.

If you cant or do not want to come up with your on salsa recipe there are several different companies that make some really good flavor packets, you can find them at any of those super stores now days that usually end with some kind of a Mart on the sign, then all you need to do is add your fresh ingredients.

Now your ready to can, Use any good canning jar and make sure they are clean, I cant stress this enough wash them in hot soapy water and rinse well, now fill your jars with your homemade salsa put a teaspoon of canning salt in and process them. If you are using a pressure cooker (witch I recommend) turn the burner on high and bring it up to fifteen pounds and shut it off. It is that easy, when the cooking process is done wait for the cooker to cool off and take the jars out and make sure they have sealed, this is easily done by pressing on the top of the jar. If you get a jar or two that does not seal just place it in your refrigerator and use it within a week or so. There you go it is just that easy.
