Artichokes with Lemon Butter - Low-Carb Recipe

Artichokes with Lemon Butter

The elegant artichoke stands on its own as a self-contained snack or appetizer. Each part has its own character, from the earthy bits of meat on the outer leaves to the dense heart at the bottom. Enjoy this recipe that takes advantage of the hidden versatility of the artichoke.

4 whole artichokes (preferably pointed-leaf, not globe artichokes)

4 lemons, divided

2 tablespoons whole coriander seeds

2 tablespoons salt

1 stick salted butter, cut in 8 pieces

Instructions:

Trim the stems of the artichokes to about 2 inches. Bring 4 quarts of water to a boil in a large saucepot. Halve 3 lemons and squeeze juice into water. Add lemon halves, coriander seeds, and salt; cook 5 minutes.

Place artichokes in the cooking liquid, and cover with a heavy plate to keep them from floating. Boil 15 minutes, until a paring knife, inserted where the stem meets the bottom, comes out easily.

In a small bowl, melt butter in a microwave. Mix in juice of remaining lemon.

Serve each person one whole artichoke, accompanied by a ramekin of butter sauce and a large bowl for discarded leaves. (See Tip)

Tip: To eat an artichoke, start by pulling off the leaves one by one. Dip the bottoms of the outer leaves in butter and eat the tender parts only.

The tender inner leaves are fully edible. In the center is a hair-like choke: scoop it out with a spoon and discard. At the bottom is the meaty heart which should be eaten with a knife and fork.

Sweet Butter Chicken Recipe

Preparation time: 10 minutes
Total cooking time: 35 minutes
Serves 4-6

Ingredients:

- 2 tablespoons peanut oil
- 1kg (2lb) chicken fillets, cubed
- 60 g (2 oz.) butter
- 2 teaspoons garam masala
- 2 teaspoons sweet paprika
- 2 teaspoons ground coriander
- 1 tablespoon chopped ginger
- 1/4 teaspoon chilli powder
- 1 cinnamon stick
- 6 cardamom pods, bruised
- 350 g (12 oz.) pureed tomatoes
- 1 tablespoon sugar
- 1/4 cup (60 g/2 oz.) yoghurt
- 1/2 cup (125ml/4 fl oz.) cream
- 1 tablespoon lemon juice

Directions:

1. Heat a wok until it becomes very hot, add 1 tablespoon of the oil and swirl it to coat. Stir-fry all the chicken in two small batches, for about 4 minutes for each batch, or until it they become brown. Remove them from the wok.

2. Reduce the heat and add all the butter to the wok. Add the spices and stir-fry them for about 1 minute or so, or until they become fragrant. Add all the chicken and coat in the spices.

3. Add the tomato and the sugar and the simmer, stirring, for about 15 minutes, or until all the chicken is just tender and all the sauce is thick. Add the yoghurt, the cream and the juice, and warm through for about 5 minutes. Remove the cinnamon and the cardamom pods just before serving.

Instructions to Make Peanut Butter Cookies at Home

Who doesn't like to munch those crunchy, yummy cookies? Cookies are my favorite snack. And Peanut butter cookies are my hot favorite. Actually I was very much interested in cooking right from my childhood, but I never had the real motivation to try out any recipe on my own. But now, I don't just bake my favorite cookies but many other interesting recipes like burritos, fajitas, pizzas and much more. Thanks to the cook books that my wife bought recently. Here is a quick recipe of peanut butter cookies for you

  • Flour - 2 cups( all purpose )

  • Salt - 1/2 teaspoon salt

  • Baking soda - 2 teaspoons

  • Oats - 1 cup

  • Sugar - 1 cup

  • Brown sugar - 1 cup

  • Shortening - 1 cup

  • Eggs - 2 or 3

  • Peanut butter - 1 cup

First thing is to pre heated your oven to 350°F (175°C).Then you need to mix the flour, salt, baking soda together. And then mix the shortening, brown sugar and normal sugar. Then you need to add the flour mix to the creamed sugar mixture and mix them thoroughly. By the way you can use butter instead of the shortening, but shortening is good for getting the cookies baked in the shape you want and it won't get brown fast. Then you have to add the eggs and beat them well. Add peanut butter and oats and mix them well till you form a dough. Then you need to shape them as you want and place them on the cookie sheets. And bake them for about 10 - 11 minutes. That's it. Your cookie must be ready.

But interestingly, when I checked out the cook books I discovered that it contains large number of secret recipes of many famous restaurants like Pizza Hut, Red Lobster and Outback Steakhouse etc. And, the recipes are very well explained even up to the minute details, and also they have provided brief notes about where that recipe originated and things like that. Also, the ingredients of these secret recipes are easily available in our nearby grocery store. Now my wife says that we need not go to any restaurant and waste our hard earned money anymore. Isn't that good?

Cooking Lobster - Simply Boiled with Butter

With lobster being so expensive, you want to make sure that you are cooking lobster the best way. I think that the simplest and best way for cooking lobster is simply to boil it and serve it with drawn butter.

My family has a Christmas Eve tradition where we serve lobster tails, crab cakes, homemade french fries, and steak. I look forward to the boiled lobster the most. While this recipe is not fancy, I think that lobster does not need a fancy recipe. The taste of the meat stands on its own and that is what you and your guests really want to experience.

Without further adieu, here is my recipe for cooking lobster:


  1. Find a large pot that can hold boiling water and all of your lobsters.

  2. Fill the pot half way with water.

  3. Add 3 tablespoons of salt to the water.

  4. With the salt water created, bring the water to a rolling boil.

  5. When the water is boiling, it is time to add the lobsters. If you are using live lobsters, I recommend placing them head first into the water (more humane).

  6. After placing the lobsters into the water, you will lose the boil. Bring the water back to a rolling boil and then turn down the heat to medium.

  7. Cook the lobsters for 12 to 18 minutes. You can tell that the lobsters are fully cooked by looking at the tail meat. The tail meat should be firm and opaque. Also, the shells should be bright red.

  8. When the lobsters are fully cooked, drain them thoroughly. In order to fully drain the lobsters, you should split the tail to drain the water trapped in this area.

Now it is time to eat!! I recommend serving the lobster with drawn butter and lemon wedges.
